Abstract
Ergothioneine is a rare natural amino acid strong antioxidant, synthesized by microorganisms such as actinomycetes, cyanobacteria, some fungi (such as Streptomyces, mycobacteria, etc.) and mushrooms. Animals (including humans) and plants cannot synthesize ergothioneine in their bodies. Plants can absorb ergothioneine synthesized by microorganisms from the soil through their roots, while animals can absorb and accumulate ergothioneine from food. The human body absorbs ergothioneine from food through organic cation transporter type 1, which is widely distributed in the cells and tissues of the human body. A large number of studies have reported on the synthesis, distribution in nature, chemical properties, physiological functions and properties of ergothioneine as an antioxidant. Although studies have demonstrated that ergothioneine has significant antioxidant activity and cytoprotective effects in vitro, studies on its physiological functions in vivo are still limited.
