Comparison Of Stability Of Carp Skin And Fish Bone Collagen In Winter And Summer

Abstract
Acid-soluble collagen was extracted from carp skin and fish bones in winter (February 2008) and summer (July 2008), heated at a certain temperature, and subjected to enzymatic hydrolysis by protease and circular dichroism (CD) method. Study its thermal stability. The results showed that the denaturation temperatures of acid-soluble collagen in fish skin and fish bones in winter were 31.0¡ãC and 32.8¡ãC, respectively, which were 1.0¡ãC and 0.6¡ãC lower than the denaturation temperatures of acid-soluble collagen in fish skin and fish bones in summer, respectively. Consistent results were obtained by circular dichroism spectroscopy (cd). The measurement results show that the thermal stability of collagen derived from fish skin and fish bone in summer is better than that of fish skin and fish bone collagen in winter.
