Effect Of Heat Treatment On The Properties Of Acid-Soluble Collagen In Tilapia Skin

Abstract

The effect of heat treatment time on the physical and chemical properties and film-forming ability of tilapia skin acid-soluble collagen (ASC) was investigated. The results showed that the heat treatment time had no obvious effect on the UV absorption and molecular mass distribution of collagen; as the heat treatment time increased, the specific viscosity of ASC decreased, and the denaturation temperature and thermal transition temperature dropped from 32.6 ¡æ and 38.15 ¡æ to 27.0 ¡æ respectively. and 29.19¡ãC. Turbidity test results show that when ASC is heat treated at 42¡ãC for more than 10 minutes, ASC does not have the ability to form fibers. Moreover, thermally denatured collagen can also hinder the fiber formation of natural collagen. On the other hand, as the heat treatment time increases, the tensile strength of the collagen film increases from 30.81 MPa to 41.33 MPa, the elongation at break increases from 8.95% to 11.59%, and the transparency value increases from 2.42 to 3.33. According to the results of scanning electron microscopy observations, it was found that the fibrous network structure of the collagen film gradually transformed into a wrinkle-like texture structure with heat treatment. The above research results show that after thermal denaturation, the fiber-forming ability of tilapia skin ASC decreases, but the film-forming ability increases.
