Extraction And Basic Characteristics Of Enzymatically Soluble Collagen From Grass Carp Scales

Abstract
Enzyme-soluble collagen (PSC) was extracted from grass carp scales using pepsin. The amino acid composition, relative molecular weight, and denaturation temperature of grass carp scale collagen were analyzed using an automatic amino acid analyzer, SDS-PAGE electrophoresis, DSC, FT-IR and circular dichroism spectroscopy. and structure were studied. The test results show that the proposed grass carp scale protein is a typical type I collagen and contains at least two ¦Á chains, ¦Á1 and ¦Á2 chains; DSC analysis shows that its denaturation temperature is 37.1¡ãC.
