Abstract
Using tilapia scales as raw materials, acid-soluble collagen (asc) and enzymatic acid-soluble collagen (pepsin-solublecollagen, psc) were extracted, and the physical and chemical properties of psc and the antioxidant properties of the enzymatic hydrolysis products were discussed. .The experimental results show that: the yields of asc and psc extracted with 0.1mol/lhcl are 3.52% and 14.88% respectively; in the amino acid composition of psc, there are 351 glycine per 1000 amino acid residues, and the imino acids proline and hydroxyproline is 180; the strong absorption peak of psc is at 205nm. The properties of psc were tested with phosphate buffer, which is consistent with type I collagen. After psc was hydrolyzed by pepsin for 3 hours, the peroxidation inhibition rate reached 82.8%, and the antioxidant effect was slightly better than the same amount. vc.
