Abstract

During the process of processing, application and storage, collagen is often affected by light, temperature and humidity changes, pH value changes, salt solution immersion, and bacterial and mold erosion, which changes the structure of the material and leads to changes in performance. This article reviews the main factors that cause changes in the structure and properties of collagen, and explains the changes in the thermal stability, triple helical chain structure and aggregated structure of collagen under the action of ultraviolet light irradiation, acid and alkali solutions, salt solutions and organic solvents, and heat. .
