Abstract
In order to use silver carp scales to produce collagen, biological enzymatic hydrolysis technology is used to prepare collagen antioxidant active peptides, which can increase the added value of aquatic product processing and better protect the environment. This article reviews the different preparation methods of silver carp scale collagen antioxidant active peptides (including solid-phase chemical synthesis, liquid-phase chemical synthesis, enzymatic hydrolysis, DNA recombination, etc.) and separation and purification methods (including ultrafiltration, ion exchange chromatography, gel chromatography, reversed-phase high performance liquid chromatography, etc.), and their structural identification methods (including mass spectrometry, continuous flow fast atom bombardment mass spectrometry, electrospray ionization mass spectrometry, matrix-assisted laser analysis, etc.) This article is elaborated in order to provide a theoretical basis for the further development and utilization of antioxidant active peptides of collagen from silver carp scales.
