Study On The Properties Of Collagen In Grass Carp Swim Bladder

Abstract
In order to effectively utilize fish waste, acid-soluble collagen (ASC) and enzyme-soluble collagen (PSC) were extracted from grass carp swim bladder and some of their properties were studied. The extraction yields of ASC and PSC were 4.7% and 11.1% respectively on a dry basis; the UV spectra of ASC and PSC showed that the maximum absorption peaks were close to 230nm; the amino acid composition analysis showed that hydroxyproline and hydroxyl in ASC and PSC The total contents of lysine are 16.87% and 17.55% respectively; the sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE) pattern shows that grass carp swim bladder collagen is composed of at least two different ¦Á chains (¦Á1 and ¦Á2) The composition is similar to type I collagen; the thermal denaturation temperatures (Td) of ASC and PSC are 33.0 and 34.8¡ãC respectively, which are 3 to 4¡ãC lower than the thermal denaturation temperature of pig skin collagen (37¡ãC). The results show that grass carp swim bladder collagen has the potential to replace or supplement terrestrial animal collagen and is widely used in industrial fields.
