Abstract
Natural collagen with a triple helix structure was graft-modified with lauric aldehyde and succinic anhydride to obtain a biosurfactant (BCB) that retains the natural collagen structure. This article studies the basic surface active properties of BCB. The results show that the emulsion types of BCB and natural collagen are both o/w type. BCB has better foam expansion, foam stability, emulsifying activity, emulsification stability, and oil absorption capacity than natural collagen, but its water absorption capacity is reduced. In addition, the surface tension of BCB decreases with increasing storage time, and the wetting ability increases with its concentration.
